As FG said, blue or green ( or even purple) tinges to normal flesh tones work really well.
Another method is to go for really pale flesh tones working towards white or ivory ( this gives a good contrast with blood!)
Personally I like green flesh on a zombie! It's the traditional Dawn of the Dead colour ( old version) and immediately differentiates between zombie and survivor. I normally start with dark green then GW Camo Green working up with more and more ivory ( bleached bone) towards bleached bone highlights.

I have used a pale flesh with game colour sombre grey then add in a bit of camo green and work up. I tend to wet brush it on. It gives a green/grey look to the skin
I start out with a white undercoat and then prime the skin Rotten Flesh (GW).
Then I wash it with black'n'brown ink of me own making (1 part black, 2 parts brown, 3 parts water).
Next the raised areas are given a thinned coat of rotten flesh again, followed by a thin thin coat of rotten flesh/elf flesh (50% of each). Lastly I highlight with elf flesh (thinned).
I think the result is great and very rotty.
